Baingan Bharta .

Ingredient :

1) Big size Eggplant : 2 Nos.

2) Mustard Oil - 3 Tbsp.

3) Onion Chopped - 2 Nos.

4) Tomato Chopped - 1 Nos ?( Medium).

6) Ginger Chopped - 1 Tsp.

7) Garlic Chopped - 1 Tsp.

8) Green Chilly - 3 Nos.

9) Turmeric powder - 1/4 Tsp.

10) Red Chilly Powder - 1 Tsp.

11) Coriander Powder -  1 Tsp.

12) Cumin Powder - 1/2 Tsp.

13) Cumin Seeds - 1/4 Tsp.

14) Chat Masala - 1 Tsp.

15) Salt to Taste.

16) Coriander Leaves - 2 Tbsp.

Procedure:

1) Apply little bit oil on the  eggplant . Place the eggplant on the  gas cob .
2) Roast them until the skin gets charred and the flesh get tender .

 Allow it to cool.
Then remove the black skin of the eggplant.  Mash the eggplant with a spoon or chopped then very finely.

3) In a pan heat mustard oil. Then temper it with cumin seed. After few mins add chopped onion and chopped green chilly.

4) Add ginger and garlic chopped when the onion become translucent. Cook it for few mins, then add chopped tomato . Mix it well and cover it with a lid on law heat.

5) After few mins tomato become soft then add all dry spice pdr mix it well. When the masala oozes out oil add the mash roasted eggplant and salt. mix it well . Cook it for few mins , add chopped coriander leaves and switch off the flame. Serve hot with rice or roti.
