Eggplant Curry with Masala Papad



Ingredients :
1)   2 - 3 Masala papad
2)   2 medium size potato.
3)   3 medium size long eggplant.
4)   1/2 tsp pach phoran .
5)   1/2 tsp red chilly powder.
6)   1/2 tsp turmeric powder.
7)   1.1/2 tsp cumin powder.
8)   1 tsp coriander powder .
9)    salt to taste.
10)  water as required.
11)  5 tbsp cooking oil .
12)  2 dry chilly.
13)  1 bay leaf.

Procedure

 1) Peel the potato & cut them into half moon shape also cut the eggplant in long strip and dip them in cold water.
 2) Cut the masala papar in long strip and fry them . keep it aside.
3)  Heat the oil in a pan & add 1/5 tsp pach phoran , bay leaf & dry red chilly.
4)  when the pachpuron sputters add patato  & eggplant .Stir them
5)  After few mins add all the ground spice and few drops of water , stir  fry for 5 to 6 mins on medium heat.
6)  Add water & salt to taste. bring to boil . don't add too much water .
This curry is not too thick  nor to thin.
7) Cover it & cook until patato and eggplant are done .
8)  Now add fried masala papar to the boiling curry.
9)  Mix it & remove from gas. serve hot with plain boiled rice.
