Coconuty Mutton Gravy.


                                         Ingredient : 

1) Mutton Cubes - 300 Gms.

2) Onion - 3 Large Size.

3) Tomato - 2 Large.

4) Broken Cashew nut -  4 Tbsp. ( soaked in warm water )

5) Ginger garlic Paste - 2 Tbsp.

6) Turmeric Powder - 1 Tsp.

7) Kashmiri Red chilly powder - 2 Tsp.

8) Red Chilly Powder - 1 Tsp.

7) White Pepper Powder - 1 tsp.

8) Coriander powder - 2 Tsp.

9) Mutton Masala - 1 1/2 Tsp. (store brought)

10) Garam masala powder - 1 Tsp.

11) Salt to Taste.

12) Sugar - 1 Tbsp.

13) Honey - 1/2  Tbsp.

14) Kasuri Methi - 1 Tbsp.

15) Red Food color - few drops (optional).

16) Bay Leaves - 2 Nos.

17) Green Cardamom - 4 Nos.

18) Cinnamon Stick - 1 Inch.

19) Cloves - 4 Nos.

20) Shahi Jeera - 1 Tsp.

21) Thick Coconut Milk - 1/2 Cup.

22)Fresh Cream - 2 Tbsp.

23) Oil - 3 Tbsp.

24) Yogurt - 3 Tbsp.

25) Tomato Sauce - 2 Tbsp.
                                              Method :

1) In a pressure cooker take mutton pieces , bay leaves, cloves , green cardamom and cinnamon stick.  Also add 11/2 cup of water . Cook it for around 5 -6 whistle . Keep it aside. when the pressure goes automatically remove the mutton pieces. Discard the water.

2) In a blender take  soaked cashew nut, chopped tomato and make a smooth puree. Also make the onion paste . keep it aside for final use.

3) In a non stick pan add oil. Temper it with shahi Jeera and little bit sugar. In gives a good color in the dish. Then add ginger garlic paste. Saute it for few min , now add onion paste. Cook this until onion change it color.

4)  After that add tomato and cashew nut paste along with beaten curd. Mix this very well. When it starts to release oil add all the dry spices and little bit red food color and tomato sauce. Mix the masala very well adding few spoons of water. Then add boiled mutton pieces. Cook it on slow flame for about 5- 10 mins. Then add salt, honey and sugar along with 11/2 cups of water . Mix this and cover it with a lid for about 5 mins on medium flame.

5) After that add the thick coconut milk, fresh cream and crushed kasuri methi, mix this well and simmer for few mins. Remove it from flame and serve hot with rooti, naan or paratha.
