Purvora Aloo Dum.

Ingredient : 

1) Potato( Little Bigger and Oval in Size) - 5-6 Nos.

2) Onion Chopped - 3 Nos.

3) Ginger garlic Paste - 2 Tsp.

4) Red Chilly Powder - 3 Tsp.

5) Coriander Powder - 3 Tsp.

6) Cumin Powder -2 Tsp.

7) Turmeric Powder - 1 Tsp.

8) Cashew Nut - 15-20 Nos ( Slightly Saute in Oil / Ghee) 

9) Raisins - 10-12 Nos.

10) Green Chilly Chopped - 2 Nos.

11) Salt to Taste.

12) Tomato Chopped - 2 Nos.

13) Whole Garam masala .

14) Kasuri Mathi - 1 Tsp. 

15) Chat Masala - 1 Tsp.

16) Chopped Coriander Leaves - 4 Tbsp.

17) Oil for Frying and Cooking.

18) Cream - 3 Tbsp.

19) Water as Required.

Procedure : 

1) Peel the Skin and Cut the potato into two halves , scoop out the center of the potato.  

2) Deep fry the cup shape potatoes and scoop out potato pieces separately, keep it aside.

3) Now the fried scoop pieces add raisins, chopped cashew nut pieces, green chilly. cumin Powder, Coriander powder, Red Chilly Powder , Chopped Coriander Leaves, salt and Chat masala. Mix it well and Stuffed the fried potato shell ( if you want add some cheese to make it even more tasty ). You can also add grated Paneer in the stuffing. 

4) Heat oil in a pan. Add  whole garam masala( cloves, cinnamon, cardamom. bay leaves) and cumin seeds.Then add finely chopped onion, saute the onion well well.  Add ginger garlic paste saute it until rawness goes off , then add turmeric powder, red chilly powder, cumin powder, coriander powder and 3-4 Tbsp of water mix it well.

5) Meanwhile make a fine paste of tomato and fried cashew nut.  Add this paste to the masala, cook it very slow flame, when the masala oozes out oil add 3 cups of water, add salt and cover it .

6) When the gravy  is nice and silky add stuffed potato shell , cover and cook it  in slow flame for 5-6 mins.  Then add kasuri methi, chopped coriander leaves and cream. Serve this exotic dish  with roti, rice or any paratha.
