Papita Malai Curry.


Ingredient :

1) Raw Papaya - 1 No.

2) Potato - 1 No.(big)

3) Coconut Milk - 1 Cup.

4) Coriander Powder - 2 Tsp.

5) Cumin Powder - 1 Tsp.

6) Ginger Paste - 1 Tsp
.

7) Green Chilly Paste - 1 Tsp.

8) Kashmiri Red Chilly Powder - 2 Tsp.

9) Ghee - 2 Tsp.

10) Salt to Taste.

11) Sugar - 1.1/2 Tsp.

12) Turmeric Powder - 1/4 Tsp.

13) Cinnamon Stick - 1 No
.

14) Clove - 4-5 Nos.

15) Green Cardamom - 4 Nos.

16) Tomato Puree -  3 Tbsp.

17) Garam Masala powder - 1 Tsp.

18) Refine Oil - 5 tbsp.

19) Water as Required.

Procedure : 

1)  Peel the potato and papaya and cut into medium size cube.  Slightly boil the papaya pieces( not too much).

2) Fry the potato and blanch papaya pieces.

3) In the same pan add ghee, temper the ghee with cloves,Cinnamon Stick and green Cardamom. Now mix all the dry spices , green chilly and ginger paste in a bowl adding with tomato puree. When the whole garam masala leaves the aroma add the masala paste.Mix it well.

4) Saute it until the masala separated from the oil ,then add salt and sugar.  Now add fried potato and papaya ,mix it slightly. After 1-2 mins add coconut milk and half a cup of water , mix it and cover it with a lid.

5) 5-6 mins later remove the lid and add garam masala. This Curry is  little bit thick. Serve Hot with rice or roti. You can garnish it with few coconut pieces.
