Ingredient :
1) Eggplant ( Big) - 2 Nos.
2) Paneer Grated - 1 Cup.
3) Onion Chopped - 1 Cup.
4) Garlic Chopped - 1 Tsp.
5) Green Chilly Chopped - 3 Nos.
6) Chat Masala - 1 Tsp.
7) Coriander Chopped - 3 Tbsp.
8) Salt to Taste.
9) Oil for Cooking.
10) Cumin Seeds - 1/4 Tsp.
11) Tomato Chopped - 2 Nos.
12) Roasted Almond Powder - 3-4 Tsp.
13) Garam Masala - 1 Tsp.
14) Cream - 3 Tsp.
15) Coriander Powder - 1 Tsp.
16) Sugar - 1 Tsp.
Procedure :
1) Remove the Top of the eggplant and cut them into lengthwise. Apply oil and some salt and put them into a non stick tawa . Cook both side for some time. Keep it aside.
2) In a bowl add grated paneer, chopped green chilly, chopped coriander leaves,chat masala, salt and a pinch of garam masala, mix it well.
3) Take Paneer masala and make portion, and put it in the thinner side of the eggplant . Squeeze it make a roundel and put a toothpick in center.
4) Heat oil in a pan add cumin seeds, chopped onion and garlic. When onion change it color add chopped tomato, mix it well. Add red chilly powder, garam masala, coriander powder, salt and sugar. . Cook the masala 5-6 mins then add 1 cup water and cover it. After 2 min add roasted almond powder and eggplant roll , pour some gravy over the eggplant roll, cover it again. Cook for 5 min then add cream and off the gas. Serve this Purvora Begun with rice or roti
